Ascorbic Acid Test Kit, Model ASC-1

This kit is designed to determine ascorbic acid (Vitamin C) in juice-based beverages. Ascorbic acid occurs naturally in juices and juice based beverages but may also be added as a preservative or flavor- enhancer.
Ascorbic acid is a strong reducing agent. When you add the iodine titrant, the ascorbic acid is oxidized. Once all of ascorbic acid has been oxidized, the next drop of titrant remains unreacted. This excess drop reacts with the starch indicator to create a color change to dark blue-purple. 1 drop = 10 mg/L of ascorbic acid.
Although there are additional acids in juice and juice-based beverages, they rarely interfere with the oxidation of ascorbic acid by iodine.
